Slimming world sweetcorn soup

Last night for tea I decided to make Slimming world sweetcorn soup, I have to be honest and say that I haven’t really stuck to my diet this weekend, what with going to the wedding and being in work. So I thought I’d make a lovely slimming world friendly meal for tea.

I made Slimming world sweetcorn soup and had it with salt and pepper chips.

I love this soup recipe, it is so quick, easy to make and very filling.
here it is :-

1 tin sweetcorn
1 tin creamed corn
2 stock cubes ( chicken)
1.5 pints Boiling water
2 eggs beaten

Put boiling water, both tins of corn and the stock cubes into a pan and stir.
While stirring drizzle in the beaten eggs a little at a time.
Leave to simmer for 15 mins to thicken.

There you go! lovely soup that is syn Free on Extra easy.
You could also add chicken too it if you wanted and its just like soup from the Chinese take away.

The chips were also syn free. I simply cut up potatoes and rinsed them in cold water, then put them into the actifry. I sprinkled over some Salt and pepper seasoning powder and turned on for 40 minutes.
