On Monday night I made broccoli pasta bake for tea, it is in one of the slimming world mini books that we have.
It was called broccoli mac and cheese, but as we had no macaroni it wouldn’t be right calling it that. So its now going to be known as Broccoli pasta bake.
Here is the recipe I used
I used fusilli pasta as we has some in the cupboard, I also tweaked the recipe a little.
As usual I didn’t weigh the pasta or broccoli and just threw it into the pan to boil with some sweet corn as well.
I grated the smoked cheese, and mixed it with a 250g tub of quark, 2 crushed and minced cloves of garlic and 2 egg yolks.
I also added 1 and 1/2 teaspoons of salt and pepper seasoning instead of chilli flakes and seasoning.
The drained pasta and veg was then mixed into the cheese mix and given a good stir.
The mixture was then transferred to some Pyrex bowls, sprinkled with a little grated cheese, and placed into the middle shelf of the preheated oven on 200ºC for 15-20 minutes.
I have to say that it was lovely, very filling and flavourful, even C liked it
I will definitely be making it again soon, there was even left overs that I had for lunch on Tuesday.
It should have been 4.5 syns each on EE but I added a little extra cheese to the top so it will have been more than that, I hadn’t used many syns on Monday so I didn’t mind.
